For the past 10 years, Elite Refrigeration has been a crucial partner in our journey at Burleigh Baker, supporting our goal to produce superior quality, long-fermented sourdough and artisanal products, even in extreme Australian summers. They’ve expertly maintained ideal fermentation conditions—around 25°C and 85% humidity—essential for our unique 24-36 hour fermentation process.

Elite’s team, led by Nic and Jason, built bespoke fermentation rooms and innovative solutions like our nut butter fermentation project, with temperature control from 0°C to 80°C and variable humidity. Their collaboration on our commercial sous vide facility and recently installed blast freezer has transformed production and food safety, cutting energy costs by up to 30% while tripling refrigeration capacity. Additional upgrades, such as our bread cooling tunnel and butter conditioning room, allow us to perfect our artisanal goods with precision.
